🛒 What you’ll need

  • Crispy tostada shells

  • Fat-free refried beans, warmed

  • Seasoned ground beef taco meat (or Beyond Meat crumbles)

  • Shredded iceberg lettuce

  • Roma tomatoes, diced

  • Yellow onion, diced

  • Colored peppers, diced

  • Corn (fresh or frozen, thawed)

  • Black olives, sliced

  • Queso cheese shreds (or plant-based cheese)

  • Fresh cilantro, chopped

  • Light sour cream drizzle (sour cream + splash of water + squeeze of lime)

  • Fresh Pico de Gallo


👩‍🍳 How to make it

  1. Place one crispy tostada shell on a plate.

  2. Spread 2 tbsp of warmed refried beans evenly across the shell.

  3. Add 4 oz seasoned ground beef taco meat, or plant-based crumbles.

  4. Sprinkle on ¼ cup shredded iceberg lettuce.

  5. Add up to 2 tbsp each of the following toppings: diced Roma tomatoes, diced yellow onion, diced peppers, corn, and sliced black olives, queso cheese shreds.

  6. Garnish with fresh chopped cilantro.

  7. Finish with a light drizzle of the sour cream mixture.

  8. Serve with a side of Pico de Gallo and 4 slices of fresh orange.
