Fall brings cooler days, colorful leaves, and the return of pumpkin spice everything. While most seasonal treats lean heavy on sugar and empty calories, these Pumpkin Spice Protein Bars are built differently.
At The Farm, we believe balance is the key. That’s why this recipe blends real pumpkin with protein powder and flax seed for staying power. The result is a soft, satisfying bar that tastes like fall, fuels your day, and keeps you aligned with your goals.
🛒 What you’ll need
1 cup pumpkin puree (canned)
⅓ cup sugar-free maple syrup
½ cup coconut flour
½ cup unsweetened almond milk
3 whole eggs
½ cup vanilla protein powder
2 tbsp ground flax seed meal
½ tsp salt
1 ½ tsp pumpkin pie spice
Equipment: Food processor, baking spatula, 2 oz ladle/measuring cup, measuring spoons, mini loaf or square baking pans, baking spray or paper cupcake liners
👩🍳 How to make it
Preheat oven to 350°F. Grease or line 12 mini loaf or square pans (or use paper liners).
In a large bowl, whisk together pumpkin puree, maple syrup, almond milk, and eggs until smooth.
Add coconut flour, protein powder, flax seed meal, salt, and pumpkin pie spice. Stir until fully combined.
Divide the batter evenly among pans using a 2 oz scoop or ladle.
Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
Let cool 10–15 minutes before removing from pans.
