Roasted tomatoes bring deep, natural sweetness. Fire-roasted crushed tomatoes add smokiness. Greek yogurt and oat milk create creaminess without excess fat. Then we layer it intentionally: lean shredded chicken for protein, a touch of cotija for flavor, crispy panko for texture, and warm naan on the side for balance. It’s comfort with a purpose.
🧺 Ingredients
Soup Base
2 lbs Roma tomatoes (about 8 medium)
1 tbsp olive oil
½ medium yellow onion, chopped
4 garlic cloves
1 (15 oz) can fire-roasted crushed tomatoes
2 cups chicken broth
1 cup unsweetened oat milk
½ cup plain nonfat Greek yogurt
½ cup fresh basil (packed)
¾ tsp salt
½ tsp black pepper
Toppings / Sides
8 oz cooked shredded chicken breast
4 tsp cotija cheese (20g total)
4 tbsp panko breadcrumbs (28g total)
1 mini naan (40g total, divided into 4 portions)
👩🍳 Instructions
Preheat oven to 400°F.
Spread tomatoes, onion, and garlic on a sheet pan. Drizzle with olive oil, salt, and pepper.
Roast for 25 minutes until caramelized and juicy.
Transfer roasted vegetables to a blender or pot. Add broth and fire-roasted crushed tomatoes. Blend until smooth.
Pour into a pot and bring to a gentle simmer. Stir in oat milk and Greek yogurt.
Simmer for 10-15 minutes.
Add fresh basil and blend again until smooth. Adjust seasoning to taste.
Warm naan in oven or skillet.

Ladle 1¼ cups soup into a bowl.
Top with 2 oz shredded chicken (do not mix in).
Sprinkle 1 tsp cotija and 1 tbsp panko.
Serve ¼ naan on the side for dipping.
